Simple Summer Sides!

I had posted these easy side salads on our tumblr account, but since we've moved to Blogger I wanted to bring them over. My wife Kaynettia loves to cook. Usually I try and help with the side dishes. Since I'm not as excited about cooking I like to keep things simple. These three salads are simple, easy to make recipes that also are very inexpensive to make. It takes little prep time to make. Like most people I'd rather be enjoying the party then stuck inside prepping the food. If you are going to a party this Memorial Day weekend or maybe you are hosting the party try one of these simple dishes to go with your meal.


Tomato and Cucumber Salad
1 Tomato diced
1/2 cup of red or white onions
1 cucumber diced
1 tbsp of EVOO (if you choose, I did without)
There are a million versions so experiment. Maybe add some red wine vinegar or balsamic vinegar. 


Corn and Zucchini Salad

1 Corn on the Cobb (when corn is out of season you can use canned corn)
1 Zucchini
1 Lime
1 TBSP of Cilantro chopped
1 TBSP of Extra Virgin Olive Oil
Cut up your ingredients and mix together in a bowl. I always eye the cilantro because its a matter of taste. Not all people love cilantro so go by your personal taste preference. 


Mixed Vegetable Side
1 Red Bell Pepper
1 Green Bell Pepper
1 Corn on the Cobb (when its not summer and corn is out of season I just use canned corn still tastes great)
Just cut the corn off of the Cobb and add to a bowl. Chopped both peppers and add to bowl. You can mix with light Extra Virgin Olive Oil if you like. I think these vegetables compliment each other so you really don’t even need oil. Its also tastes great if you grill the veggies. Raw or grilled it makes for a good side

Now depending on the size of your party you can adjust the amount of ingredients needed. I love these three sides. They are healthier side options than your typical potato salad and they taste delicious. I hope you have a wonderful weekend. Try one of these salads. I promise you'll love them.
