New Food Journey Starting With Soup

My wife Kaynettia just had the vertical sleeve gastrectomy surgery. For the last nine days she has only had soft foods like jello, pudding, or yogurt. Yesterday she had mashed potatoes. When we talk about food think maybe a quarter cup of food. A few bites before she is full. Food will never be the same. 

After the surgery we are on a new journey of eating healthier and trying new recipes. Today I decided to start with a soup. Considering she can't eat much, but I wanted something we could both enjoy. The easiest types of soups for her to eat right now are creamy types. We are going to try a Roasted Tomato Soup by Food Network's Sunny Anderson. For my wife I may need to blend it extra so it is smooth for her. 


Let's start with the ingredients:

Ingredients

4 tablespoons olive oil

2 tablespoons balsamic vinegar

2 teaspoons chopped fresh thyme


8 cloves garlic, peeled


8 Roma tomatoes, halved and seeded


2 red peppers, quartered and seeded


1 medium onion, quartered


Kosher salt and freshly ground black pepper


One 6-ounce can tomato paste


6 cups vegetable stock


1/4 cup loosely packed chiffonade fresh basil, for serving


Original recipe makes 8 servings.











































Preparation: 

Preheat oven to 400 degrees.
Prepare the first four ingredients and place on half-sheet sized baking sheet with lip. Throw thyme stems on top. Drizzle with EVOO and Balsamic. Add salt and pepper. Toss slightly. Arrange so vegetables are mostly cut side down. Bake for 45-50 minutes.
Remove veg and any juices from baking sheet to dutch oven (or similar) over medium-high heat. Add tomato paste and stir to combine. Add stock. Cover and bring to boil. (About 5 mins.) Reduce heat to low and simmer covered for 20 minutes. Pull thyme stems from mixture. Hit with immersion blender on low, using caution. Several downward passes work best. Blend to desired consitency. Serve with basil chiffonade as garnish, if desired.


Tip on Blending Hot liquids:

When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid; that prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times, then process on high speed until smooth. 




So cooking this meal was my first time making soup. I found it easy to make. The end result was so delicious. This so far is my favorite tomato soup recipe. My wife was able to enjoy a little bit of soup. Of course I made a grilled cheese sandwich to go with my meal. It might not be the healthiest of choices, however it was very delicious. Changing eating habits takes a moment. I will be working on it. For me I have to take away and add slowly till its all healthy. The doctor said that's fine.
 A little advice on making gourmet grilled cheese is always buy your cheese at the deli. They can give you as many slices as you need. If I would have bought the pre-packaged sliced cheese I would have spent at least $20 just on cheese. At $4-6 a pop that's expensive. You really don't use fancy cheese every day unless you are a chef. These food channels have it looking like we all have these expensive spices, and cheeses, etc on hand at all times. We don't. I knew I was only making a couple of sandwiches so I only asked for the amount of cheese I would need. No need to waste food when the cost of food is rising. 

I hope you give this recipe a try. I'm sure you will enjoy it especially if you like tomato soup. I appreciated that there was no cream added. The flavors of the roasted vegetables is incredible. I have a feeling I will be making this again in the future. Everyone in our household gave it a thumbs up. That is not always easy to do with a picky crowd.

Starting to Use Coupons

I was never interested in couponing until I started getting coupons for my Disney movies. I like Disney movies and they are usually $25 for Blu-rays. That's way too expensive. So when Scott Brand teamed up last year with Disney I saved quite a bit on the movies. I still wasn't a coupon person. I just looked for Disney savings since I love Disney things. I realize most people become coupon gurus because they want to save money.The occasional coupon was good enough for me.

 I've watched the Extreme Couponers and it seemed pretty crazy to me. Spending hours a day couponing seemed a little ridiculous. This was my thought process. Then my sister-in-law started couponing. And every week she was getting all kinds of items for very little money. It sparked interest in my wife. For the last two weeks Kaynettia has been in contact with her sister talking about coupons. So a couple weeks ago she went shopping and came back with a pretty good deal.


She came home from the store with 20 rolls of tolliett paper, 2 shampoo bottles, and 2 bottles of conditioner. The total cost of her purchase was $4.94. Before coupons her total was $25.96. She saved $21.02. She showed me the receipt and it caught my attention. 

If we can coupon and save money on the items we use I would be satisfied with that. I don't want stock piles of items we may or may not use. We don't have room for a stockpile. I'm starting to understand this whole couponing thing, although I would rather us stick to things we need. If you can save some money then why not try.

Ben Kingsley Cast As "Bagheera" In The Jungle Book



Ben Kingsley is Bagheera in Disney’s The Jungle Book.

Academy Award-winning actor Ben Kingsley has been cast as the voice of Bagheera in Disney’s upcoming The Jungle Book. Directed by Jon Favreau from a script by Justin Marks, The Jungle Book combines live action and animated filmmaking. The Jungle Book arrives in theaters in 3D on October 9, 2015.

Disney Junior to launch a Lion King Spinoff

Coming to Disney Junior in 2015!

I grew up with The Lion King. It's one of my favorite Disney movies. Disney Junior announced that they will be launching a spinoff of The Lion King called "The Lion Guard." Some familiar characters will be back in action. Expect to see favorites like Timon, Pumba, Rafiki, and Zazu.

Bill Condon to Direct Live-Action ‘Beauty and the Beast’ Film for Disney

With the recent release of “Maleficent,” which grossed more than $170 million worldwide in its opening weekend, Disney is working fast on its next live-action fairy-tale adaptation.
Bill Condon is set to direct a live-action version of “Beauty and the Beast" for Disney.
Evan Spiliotopoulos is writing the script with Mandeville Films producing.
The studio’s 1991 animated feature version of “Beauty and the Beast” grossed more than $375 million worldwide, spawned a Broadway play and became one of the few animated pics to receive a best picture Oscar nomination.
Disney has been on a roll lately thanks to successful updates of literary classics like “Alice and Wonderland” and “The Wizard of Oz” and reinventions of its own stories into big box office hits. The Mouse House is also developing a live-action version of “The Jungle Book,” which has Jon Favreau directing, and its “Cinderella,” helmed by Kenneth Branagh, is set to bow next March.
Condon is best known for his hit feature adaptation of the musical “Dreamgirls,” and his experience in helming a film with strong musical elements will help this film, which could very easily go down that path. Condon also penned the script to the widely successful adaptation of musical “Chicago.”
He also delivered two of the best reviewed films in the “Twilight” series and most recently adapted the script to Fox’s “The Greatest Showman on Earth.” Condon is repped by WME, Anonymous Content and Alexander, Lawrence, Frumes & Labowitz.

Disney's Summer Theatrical Releases

It's summer time about to be a great time to go see movies to cool off in between swimming and all the fun recreational events summer brings. My wife and I love Disney movies. We are most excited about Maleficent which opened over the weekend. Who wouldn't be excited to see Angelina take on the role of one of Disney's Villains. Let's see what other movies that Disney has in store for us.

Another Marvel comic is hitting the theaters. This time it's Guardians of the Galaxy. Peter Quill an American pilot finds himself a part of a manhunt after he steals an orb coveted by the evil Ronan. In order to fight against Ronan, Peter must gather a bunch of misfit heroes to help him. It's an epic battle of good vs. evil.

Looks like the summer will be filled with new Disney favorites. There are some exciting Disney movies coming out this Fall that I will share later this summer. Birthday Perks

One of the best things about birthdays is being rewarded. Several companies offer deals for their guests on their birthday. Sometimes it is as simple as showing up with an ID or signing up to receive emails. I have a specific email address strictly for email sign-ups separate from my personal email. It helps with sorting through junk mail, and I know to check it looking for deals that are sent to my account.

When it comes to birthday treats it helps doing your research. Do you have a favorite place you shop? A favorite restaurant? It's always a good idea to ask if they offer anything special for birthdays. 

Here are a few Birthday deals I have been sent recently since my birthday is approaching. 

Sephora offers their guests a nice birthday sample when you sign up for their email program. Every year they team up with a different company to offer the gift. Last year was Benefit Cosmetics. This year they teamed up with Make Up For Ever. 


Best Buy offers its Rewards Members a $5 coupon for birthdays. 


Benefit Cosmetics when you sign up for emails Benefit offers a free hello...gorgeous gift with the purchase of an item on their website as a birthday gift. They send a coupon code for this gift. It's a nice trio sample. 


Benefit Cosmetics also offers a free brow shape at their participating brow bars on your birthday. The Benefit Brow bars at Ulta do not participate. I have used the ones at Macy's and they do offer this service on your birthday. You'll just need an ID. 


Ruby Tuesdays offers guests who sign up for their emails a free birthday burger. 


Mimi's Cafe offers participants who sign up for emails a free birthday dessert. 


Del Taco offers a free milkshake on your birthday when you sign up for their emails. 


Famous Footwear offers a $5 off coupon on your birthday when you sign up for their emails. 


Real Mex Restaurants offer a free entree on your birthday when you sign up for their emails.


Kohls offers their rewards members a $10 birthday coupon.



Baskin Robbins when you join their Birthday Club and you'll receive an email for a FREE 2.5-ounce scoop of ice cream five days before your birthday.

Starbucks offers Gold Card members a free beverage on your birthday when you sign up for their rewards program and reach Gold status. 



These are just a few of the many birthday deals that companies offer. Sign up for emails or rewards programs to have the best chance of receiving special deals. Don't be afraid to ask your favorite restaurants or places you shop if there are any birthday rewards. Even smaller mom and pops type restaurants offer coupons and rewards. It's a matter of doing your research and not being afraid to ask. 

I know for one I'm going to enjoy my birthday rewards.
