Trying New Things


This morning Kaynettia surprised me with this Turkey Cup. The recipe she found on Pinterest was for ham, but we only had turkey in our refrigerator. Simple substitution. Super simple to make. Just take your muffin tin and line it with the 3 slices of turkey meat. Crack an egg and pour it into your turkey cup and bake for 20 mins at 375 degrees. 

Spray the tin before you add the meat with your Pam or whatever you use to keep it from sticking.

What's great about this meal is you can easily scramble the egg if you like and add some spinach and tomatoes with a little cheese on top. Make your own omelette type mix. I really enjoyed the over medium well egg. So many things you can do with this simple recipe to make your own. 

It's high protein and low carb. I had a bowl of fruit to go with my cup. It's a fast easy breakfast that anyone can make. I really recommend trying this recipe out and making it unique to your own taste.


Yesterday we tried Snapea Crisps. Omg! These little baked green pea crisps are addicting. Definitely a better alternative to potato chips. Less sodium. Low in sugar. 4 grams of protein. They made a pretty good snack. Like I said a healthier alternative. 

When it comes to food and losing weight we all know its hard to give up those favorites. I've found that if I can find a healthier alternative to something I once enjoyed it makes the transition a little easier. For me I love potato chips. Not all the time, but when I'm craving something salty that was my go to food choice. Now I can replace that food for these snapeas. The idea is to really start thinking about the choices I make. Plus this is a food item Kaynettia can eat even with the vsg surgery. It's a win-win in our household.

Live Action Dumbo Film On It's Way

Clearly emboldened by the success of Maleficent and without waiting to see how its latest adaptations of Cinderella or The Jungle Book perform, Disney has been digging through its animated archives again and has come up with Dumbo. Transformers: Age Of Extinction writer Ehren Kruger has been hired to turn the elephant tale into a live action adventure.

Presumably, this updated take on the 1941 classic will blend CG with real-world settings to re-tell the tale of the elephant born with comically huge ears. Initially mocked for his giant lobes, Dumbo has the last laugh – and learns some important life lessons to boot – when his best pal, Timothy Q. Mouse, helps him learn how to fly.

It’s early days for the new project, which so far only boasts Kruger on writing duty with Tron: Legacy producer Justin Springer set to produce. Dumbo represents the latest ‘toon title the Mouse House is pushing into the remake machinery; Kenneth Branagh’s Cinderella is due out next March while The Jungle Book is in pre-production with Jon Favreau overseeing matters and Beauty And The Best is questing through development via Bill Condon.

Leftovers from our Southwestern Meal

Last night we turned our southwestern inspired chicken mixture into a small quesadilla with a whole wheat tortilla and added a little cheese. We had some light sour cream on the side. Made a fantastic quesadilla. 

From time to time it's really nice to have leftovers that can be turned into a different meal. A second life. It stretches your dollar. We all know leftovers can get boring. 

Look for second meals to make with your leftovers. Keep trying new recipes.

Disney Casts "Enchanted 2" Spell with 'Smurfs' Scribes

Seven years after Disney‘s live-action princess adventure Enchanted scored Golden Globe and Oscar noms and a $340M worldwide box office, the Mouse House is moving again on a sequel. Shrek 2 and The Smurfs writers J. David Stem and David N. Weiss have been hired to write Enchanted 2, marking the scripting duo’s latest live-action family outing after penning Are We There Yet? and Daddy Day Camp for Sony.
Amy Adams starred and sang in the first pic in an eerily accurate portrayal of Giselle, the animated Disney princess who crosses over into the real world, opposite Patrick Dempsey, James Marsden, Timothy Spall, Idina Menzel, Rachel Covey, and Susan Sarandon. Kevin Lima directed the musical romance, which opened at No. 1 over Thanksgiving weekend 2007.
Anne Fletcher (The Proposal, The Guilt Trip) is at the helm of the sequel, which will be produced again by Barry Josephson and Barry Sonnenfeld. An earlier draft was written by Jessie Nelson. No word yet on which cast members are expected back for more happily ever after. Weiss and Stem are repped by WME and Christine Cuddy of Kleinberg Lange Cuddy & Carlo.

Did you see Transformers Age of Extinction Over the Weekend?

                                                  

I got a chance to catch a screening of Transformers Age of Extinction last week. I'm not a die-hard Transformer fan. I've seen the first two movies and somehow skipped the third. Overall this fourth movie was pretty good although very long at almost 3 hours run time. I actually preferred Mark Wahlberg over Shia LaBeouf. Of course there was a lot of action. Optimus Prime was bad ass. Not much of a role for Bumblebee and they added some characters I was not familiar with. Maybe they were in the third movie I didn't see. Kelsey Grammer played the villainous character Harold Attinger.  I really enjoyed Stanley Tucci's character Joshua Joyce over Grammer's Attinger. I've always loved Stanley Tucci. I think he is a great supporting actor.  While I enjoyed Mark Wahlberg's addition I thought the storyline of his daughter and her boyfriend was annoying. Really they could have done without them. I guess he needed someone to protect. They wanted a background for him. A family guy who saves  a Transformer and becomes a sort of hero. I suppose these action movies aren't really made for their story lines as much as they are the action and how much CGI stuff they can add. With that said I liked this fourth movie way better than the first two movies.

If you are heading to the movies go check out Transformers Age of Extinction. Don't forget Regal and Cinemark have special days were you can get discounted tickets like Senior Days and Tuesdays for both companies have a $5 movie ticket all day in the Sacramento area. I'm not sure about other cities. Its worth checking out if you can save money. Also sign up for their reward programs to get other offers. Regal has the Regal Rewards card and you can earn rewards like free popcorn and even free movie tickets. Cinemark has coupons through their email and their new Cinemark app. I like to save money if I can. There is always the early bird option at most theaters. It is generally cheaper if you attend the first showing of the day.  Go out and watch movies this summer when you are trying to beat the heat.

The Making of a Southwestern Inspired Meal




So we're trying new meals that are healthier. The great thing about eating healthy is that there are all kinds of recipes on the internet, and they are easily accessible. You can find food bloggers or go on Pinterest. There are endless amount of suggestions and advice about food. You can find low carb, or fat-free, or even gluten free recipes. Vegetarian or Vegan recipes. It doesn't matter what kind of diet you have there is a place you can go to search for recipes that fit your specific needs.

Typically my wife and I will checkout different recipes online to experiment with. I usually follow the recipe to a "T", while my wife takes what they've given and adds her own spin to it. Obviously I'm not the cook of our household. I think it's a real talent to anyone who can come up with great tasting food combinations. Kudos to you!

Yesterday while I was at work Kaynettia was busy looking for recipe ideas for dinner. She decided on a simple meal idea on Pintrest. It was something she could eat. It was a low carb, high protein southwestern inspired meal. They didn't have a name for it unfortunately. 

We hit up the Supermercado to buy the vegetables. I had seen in last weeks grocery ads that the vegetables we needed for the meal were cheaper at the Supermercado than other grocery stores, however we did buy our meat at Bel-Air since it was on sale. I always look for the best food prices to try and save additional money. The cost for everything was under $20. It feed three adults plus Kaynettia. She's moved up to about 1/2 cup of food. Even though hasn't been able to reach a full 1/2 cup yet. It takes time after surgery.

Ingredients:

3 diced up cooked chicken breasts

1 avocado diced

4 diced tomatoes

1 can of corned; drained (fresh cooked if in season)

1/2 cup of red onions diced

1 can of black beans; drained

Add Cilantro to taste

Perfect Pinch Mexican seasoning & chili powder to taste. 


Directions:

These are the directions according to Pinterest. Sauté chicken with 2 tbs of Chili powder; mix all of your vegetables with your cooked chicken and enjoy. Serves 2-4.

They didn't give us much.


Kaynettia's Spin:

Kaynettia marinated the chicken first in her own little concoction. For her marinade she blended 3 tomatillos, 3 cloves of garlic, 1/2 of a red onion, juice of 1 lime, 3 tbs of olive oil, 1 tbs of Perfect Pinch Mexican seasoning. Marinate for at least 30 min-1 hour. The longer the better. Then she grilled the chicken. In a separate pan she added the garlic and onions and caramelized them. Once that was finished she added the rest of the vegetables to cook down a little while the chicken finished cooking. Once the chicken was done cooking she diced it up and added it to the rest of the vegetables. Mixed them together and served it.


Kaynettia was able to eat this meal. It was her first normal meal since surgery. Her portion was very small. For the rest of us she cooked some cilantro lime brown rice to go with the meat and veggies. It can be low carb without the rice. Everyone enjoyed this meal. I added extra lime to mine because I love squeezing lime juice over any Mexican or Southwestern inspired dishes. I probably would have sprinkled some hot sauce too if I wasn't out. It was a perfect meal after a very long day at work.
